Indian chickpea Salad:
One of the most nutritious beans – chickpeas are rich in iron, protein and folic acid. Curds enrich this tangy Indian chickpea salad with mint dressing with more protein and calcium while coriander and mint increase its vitamin A content. So here’s a salad with combination of chickpea and mint dressing.
Soaking time: Over night
Preparation time: 15 mins
Cooking time: 20 mins

Soaked, drained and boiled kabuli chana (white chick pea) – 2 cups
Tomato cubes – ¾ cup
Cucumber cubes – 1 cup
Spring onion – ¾ cup (chopped)
Salt to taste.
For mint dressing:
Mint leaves – ½ cup (chopped)
Coriander leaves – ½ cup (chopped)
Sugar – ½ tsp
Salt to taste
Black pepper according to taste.
Preparation of mint dressing:
Combine all the ingredients and blend in a mixer to a smooth paste using a little water. Keep aside.
Preparation of salad:
To make Indian chickpea salad, combine all the ingredients in a bowl, add the mint dressing and toss well. Serve the salad immediately.

Green tea leaves: ½ cup (finely chopped)
Mint leaves: ½ cup (finely chopped)
Jaggery: 1 tsp
To a pan or a vessel add five cups of water, to that add green tea leaves, mint leaves and jaggery and let it boil. reduce the flame and boil until the water decreases to about three cups. Remove from flame, add tea leaves and cover it with a lid and set aside for few minutes. Using a strainer, strain the tea and throw away the tea leaves. Your lemon grass tea is ready.
