Bhel puri- A quick recipe:

Bhelpuri is a savoury snack originating from India, and is also a type of chaat. It is made of puffed rice, vegetables and a tangy tamarind sauce, and has a crunchy texture.

Bhel is often identified as a ‘beach snack’, strongly associated with the beaches of Mumbai, such as Chowpatty or Juhu. 

Bhelpuri is made from puffed rice and sev (a fried snack shaped like thin noodles made from besan flour) mixed with potatoes, onions, chat masala and chutney and a mixture of other fried snacks as the base of the snack.Bhelpuri has a balance of sweet, salty, tart and spicy flavors, with different textures as well, including crispy and crunchy from the puffed rice and fried sev. Other commonly used ingredients include tomatoes and chilis added to the base. In northern India recipes also include boiled potatoes cut into small pieces.

Different chutneys impart a sweet, tangy or spicy flavour. There are two popular chutneys used: a dark brown sweet one made mainly from dates and tamarind (saunth chutney) and a green spicy chutney made from coriander, mint leaves and green chillies.

Bhel puri- A quick recipe:

INGREDIENTS:

  • 2 cup murmura / puffed rice
  • ½ potato / aloo (boiled & cubed)
  • ½ onion (finely chopped)
  • 3 papdi (crushed)
  • 3 tbsp mixture
  • 2 tbsp fried peanuts
  • 2 tbsp tomato (finely chopped)
  • ½ tsp chaat masala
  • ¼ tsp kashmiri red chilli powder
  • ¼ tsp salt
  • 3 tbsp tamarind/imli chutney
  • 2 tbsp green chutney
  • 1 tsp lemon juice
  • 2 tbsp sev
  • 1 tsp coriander (finely chopped)

INSTRUCTIONS

  •  Firstly, in a large mixing bowl take 2 cups murmura/puffed rice. dry roast murmura/puffed rice if they are not crisp.
  • Add ½ onion, ½ potato, 3 crushed papdi, 3 tbsp mixture and 2 tbsp fried peanuts.
  • Also add 2 tbsp tomato, ½ tsp chaat masala, ¼ tsp chilli powder and ¼ tsp salt.
  • Mix well making sure the spices are combined well.
  • Further add 3 tbsp tamarind chutney, 2 tbsp green chutney and 1 tsp lemon juice.
  • Mix well without turning murmura/puffed rice soggy.
  • Add 2 tbsp sev and give a mix.
  • Finally, enjoy bhel puri topped with few crushed papdi and garnished with onion, coriander.
